I have a 2 TB external drive that contains animal videos and photos from the time I started this hobby 10 years ago. This drive currently contains 724 GB of data .....184 folders and 77,883 files. Almost daily I add to this drive from my various trail cameras using drag/drop from the camera SD card.
Periodically I use Acronis to do a system image backup of this drive to another external drive.
Periodically I also copy all this data to yet another external drive that I can temporarily loan to friends & neighbors. I don't generate a system image; rather, I actually copy each folder/file to another external drive using the Windows 'Copy to folder' command. Needless to say, this now takes a long time because of the number of files involved.
Is there a better way to achieve my objective? And/or is there a way to copy only the new and changed files?

Unless you want to go with a package such as GoodSync, which history has shown you do not like, drag and drop is probably your best option.
Keep in mind that many think that, once a copy is started, you can't do anything else on the system. This is totally false. While this file/folder transfer is going on use your system like normal.

Jay, thanks for your response. It's not necessarily that I dislike GoodSync, it's just that Patty got me started on SyncToy years ago. I wonder if SyncToy would work here?
I do know that I can do other things when a copy is started, which I usually do.

Yes, SyncToy would probably work for your use case.
